Omber

Restaurant Omber, on the Amstel, is named after one of the twelve colours on Rembrandt’s palette: a warm, deep brown. That palette is in the menu too, with dishes such as Het schilderspalet and De nachtwacht, a lamb shoulder with pumpkin, made with local ingredients in unexpected combinations. It suits the hotel where Rembrandt’s Night Watch once hung for seventy years. New specials are added every month, and in the morning you have breakfast à la carte here with a view of the Amstel.
