On the eighth and ninth floors of Hotel Jakarta, on the IJ, rooftop bar Skybar Malabar looks out over the water and Amsterdam city centre. The bar is named after a volcano on Java, though this Malabar sits 31.6 metres above sea level instead of 2,343, and, unlike its dormant namesake, it is active. The menu has adventurous cocktails with flavours from the Far East alongside Western classics. You can’t reserve: you simply go up.
